How could something so simple cost so much? That moment of disbelief, of unexpected sophistication hiding behind something familiar, is exactly what we bottled into this cocktail. It looks unassuming. It sounds straightforward. But the first sip tells you — yeah, it's worth it. If you wonder, we tested it with Bourbon but it is best with Port.

Every bar has its legends. Ours has one in person. Le Parrain — The Godfather in French — is a cocktail made in honor of a man who needs no introduction in the world of cognac. As the owner of one of the largest private cognac collections in the world, and a trusted palate called upon by the great houses to evaluate their finest expressions, he is someone who has tasted history, bottle by bottle. He is also my godfather.

As the owner of this bar, I grew up watching him reach for that glass with the same quiet satisfaction every single time. Some memories live in photographs. Ours lives in a cocktail. Papy Robert is my grandfather's lemonade, all grown up.

凤凰于飞 — an ancient Chinese poetic expression meaning "the phoenix soars together." One of the most beautiful metaphors in Chinese literature for a couple in perfect harmony. Two becoming one. Rising together. Dedicated to my wife, a Chinese Singaporean woman whose grace and strength are the quiet backbone of everything we have built. Butterfly pea flower shifts the colour before your eyes — just like the best love stories do.
